Adds environment variable documentation for Pinecone vector database support.

### Included Environment Variables
- `PINECONE_API_KEY`
- `PINECONE_ENVIRONMENT`
- `PINECONE_INDEX_NAME`
- `PINECONE_DIMENSION`
- `PINECONE_METRIC`
- `PINECONE_CLOUD`

All variables follow the existing documentation structure and formatting.

No runtime or functional changes included in this commit.
